I just made the easiest fudge in the world. It tastes like you slaved over a stove when in all actuallity it takes less then 15 minutes to make.
If you are using the Florida Crystals powdered sugar be sure to buy two packages unless you have some already on hand. 3 2/3 cups is just slightly more then the package has in it.
I put a picture of the ingredients below so you could see what the Earth Balance and Florida Crystals Powdered Sugar are.
Vegan Peanut Butter Fudge
Ingredients:
3/4 cup plus 2 tablespoons Earth Balance
1 cup Peanut Butter
3 2/3 cups Powdered Sugar
Crisco (greasing the pan)
Melt the Earth Balance in a small saucepan over VERY low heat. Once melted stir in the peanut butter. As soon as you have the peanut butter mixed nice and smooth, turn off the heat. Stir in the powdered sugar. It will get a bit tough to mix but just keep mixing. Spread into a greased 9x9 pan and chill until hardened.
I LOVE peanut butter so the next time I make this I will add a bit more peanut butter. But this came out surprisingly well for so few ingredients and so little time.
You could also make this in the microwave by melting the butter and then mixing the peanut butter in until smooth and then the powered sugar. I have not tried it this way, but I am sure it would work out very nicely.
