Vegan American Chop Suey


I have been following a Vegan Diet since February 2010.  So, far I love it.  I do slip up once in a great while and have cheese or something sweet like ice cream.  But not very often.  I have not had any meat of any sort since February.  I choose to follow a Vegan Diet for the health benefits but also because the abuse animals suffer to become food for people.  I do not condemn those that choose to eat animals products.  To each his own.

I hope that by doing this blog people will see that Vegan cooking/baking can be really delicious.  I will be honest and upfront about all the recipes that I try and I will try to post pictures with each one that I try.

So I have just now tonight decided to do a blog of my vegan cooking experience.  I am going to cook something vegan everyday that I can and create a post about it.

Tonight I cooked an American Chop Suey type dish with a homemade tomato sauce.  It is really delicious.  My Husband and Mother-In-Law both liked it very much.  My kids did not try it, but that is par for the course in my houseold.

Vegan American Chop Suey

Ingredients:

1 onion
2 cloves garlic
olive oil
1 eggplant
3 zucchini
1 green pepper
10 tomatoes (or whatever works for you)
Fresh Basil
Oregano
2 tablespoons arrowroot
1/4 cup hot water
2 boxes Quinoa elbow macaroni



Melt the Earth Balance in a large saucepan.  I diced up an onion and garlic and sauted until just tender.  Then I diced up a large eggplant, and 3 zucchini and sauted them until they were tender.  Then I put in about 10 tomatoes and a green pepper diced up.  I let all that cook until the tomatoes were broken down pretty good.  Then I add lots of fresh basil and some dried oregano.  I let this simmer for about an hour and let it reduce and thicken up a bit.  Then I put about three quarters of this into the blender to make it nice and smooth.  I left a quarter of it so it could have some nice chunks in it.  It seemed thick enough to me so I dissolved about 2 tablespoons of arrowroot into a bit of hot water and stirred that in and let it simmer a bit longer.  While this was simmering I put on some water to boil with a bit of olive oil.  I then boiled some Quinoa elbow macaroni and added that to the sauce.  I used two different kinds of the Quinoa Pasta because that is what I had on hand.
